1 ½ Sticks butter, melted

1 ½ Cups dark brown sugar

2 Eggs, lightly beaten

1 Tablespoon vanilla

1 Cup AP flour

½ Cup rough or steel cut oatmeal

½ Cup sweetened flaked coconut

1 Teaspoon baking powder

½ Teaspoon salt

½ Cup dark chocolate chips

Non-stick spray

Preheat oven to 350 degrees. Prepare an 8” x 8” x 2” pan with non-stick spray.

Place butter in a medium-sized mixing bowl and melt in microwave. Add brown sugar, vanilla and (when butter is cool enough to avoid cooking them on contact) eggs. Combine flour, oatmeal, coconut, baking soda and salt in a large measuring cup or small mixing bowl. Mix butter mixture with flour mixture by hand until just combined, add chocolate chips and mix through.

Note: Coconut is something people seem to love or hate, so I think it is a good idea to let people know it is in there. After this recipe was first published, I brought these treats to a party, so when I made them I sprinkled more coconut on top before baking. As someone who loves coconut, I thought the bars were improved by the addition of extra coconut.

Bake at 350 degrees for 45 minutes. Cool 15 minutes or more before slicing.
