This granola recipe is gluten free, nut free and dairy free. Packaged in decorative bags, it makes a nice holiday gift. I like to include a tag with the ingredients when I give a food gift.
Pumpkin Spice Granola
4 Cups old fashioned rolled oats (I used Bob’s Red Mill Gluten Free)
2 Cups sweetened coconut flakes
2 Cups pepitas (hulled pumpkin seeds)
2 Cups dried cranberries
1 Tablespoon pumpkin pie spice
¾ Cup vegetable oil
½ Cup honey
Pinch of salt
Preheat oven to 325 degrees and line a rimmed baking sheet with parchment paper.
In a large bowl, combine oats, coconut, pepitas, dried cranberries and pumpkin pie spice. Stir to combine, and then add vegetable oil and honey. Stir well to coat oat mixture. Spread mixture evenly on baking sheet and season with a small amount of salt. Bake 45 minutes, stirring several times during the cooking process (every 10 minutes or so.)
Cool completely before storing.
