This salsa comes together quickly and is a nice change of pace from traditional salsas. I like to serve this with grilled steak, chicken or fish and with tortilla chips.

Cucumber Mango Salsa

1 English or hothouse cucumber, diced (about 3 Cups)

1 Mango, diced (about 1 Cup)

3 Scallions, chopped

Juice of 1 lime

2 Tablespoons Olive oil

Salt

 

Dice cucumber and mango approximately the same size. Toss cucumber, mango and scallion in a medium size bowl with lime juice and olive oil. Season to taste with salt.
